Mei Zhan Congou

Mei Zhan is a type of tea bush that grows primarily in China. Its leaves make various teas including oolongs, green teas, and black teas that are generally highly regarded. This is the black tea version. The congou method of processing tea means that the tea master creates light thin strips from the leaves, and the method requires a lot of practice and skill to not break the tea leaves; but the goal is to create a tea that has the taste of baked apples. This lot nailed it! It's a wonderful example of the congou style of black tea. 

Tasting Notes: Baked Apple

Steep: 1 tsp of tea for 8oz water. Water temperature: 205. Steep time 3 minutes. 

Approximately 18 tsp in a 1 ounce package.
