Fraijanes is near the middle of the country around Guatemala City. There is regular volcanic activity here which makes for great soil, but most of the land use in this area is non-agricultural, so it has a small coffee output.
We roast it lighter than Huehuetenango but darker than Antigua. Instead of taking it 10 seconds into the 2nd cracks, we take the roast just shy of the 2nd cracks. It is not especially compex, but it's very smooth and pleasant with milk chocolate and slight floral notes. Caramel aroma. Nice thick mouthfeel. Lingering aftertaste. We are pairing it with Colombia for a sweeter chocolate medium roast.
