Flores Island is one of the major Indonesian islands along with Sulawesi, Sumatra, Bali, Timor, Java, etc. The difference is that Flores carefully sorts their beans by size and processes them very carefully, so you end up with a cleaner tasting coffee. Think of it as a cleaner Sumatra. No earthiness, but a great sweet nutty flavor, tobacco, and bakers chocolate give it a distinct characteristic from the other Indonesian coffees.
Flores Island is a wild mountainous jungle island with active volcanoes. One of the only places in the world where the Komodo Dragon lives in the wild, along with giant rats and several species of poisonous snakes. Flores is one of the newest Indonesian coffee exporters, with a global market for their coffee emerging only in the past decade. They are a small island, with a limited production, so for that reason this is a seasonal coffee.
We roast it a little lighter than the other Indonesians to celebrate the complexity of flavor found in Flores Island beans.
