This is a natural (Dry processed) Yirgacheffe co-op coffee with Fair Trade and Organic certification and processed at the Konga mill which has a high reputation. The co-op is part of the YCFCU cooperative and operates in the Gedeo zone within the Yirgacheffe region. But this year, the leader of the YCFCU co-op, Takele Mammo, kept his personal harvest set aside and it sold it separately. It's very well sorted and flavorful. It has a creamy, buttery mouthfeel and there's passionfruit, paypaya, and cherry in here. It smells and tastes really tropical. No fermented or earthy tastes at the finish which is the flaw of so many natural Ethiopians. It's just a great example of a natural Yirgacheffe -- not your ordinary mug of coffee.
Roast this like you would any other natural process Ethiopia. On my commercial drum roaster, a City Roast with an ending bean temp of 402 is about 10 seconds past the end of the 1st cracks and seems to be the sweet spot. However, this bean is more forgiving than most Ethopians. We've found that the bean responds well to a variety of roasting curves. Excited about this one. https://royalcoffee.com/product/47130/
