This is a natural (dry processed) Yirgacheffe coffee grown by Ayele Fulasa from the village of Werkasakaro. It is a well sorted grade 2 and is one of the first arrivals so far this year so it is very fresh.
This coffee is a very nice naturally processed Ethiopia with notes of blackberry, lavender, citrus and black tea with a clean finish.
Roast this like you would any other natural process Ethiopia. 30 seconds out of first cracks seems like the sweet spot to us. Being a natural processed coffee, you shouldn't take this coffee into the 2nd cracks, and we don't really get it anywhere close to that level.
