On the edge of the Harenna Forest in the Bale Mountains, some 700 farmers live here and grow coffee on an average of 2 hectares, often above 6000 feet altitude. Even though these coffee farms are deliberately planted and cared for, coffee also still grows wild in this area. This is the Eastern side of Sidamo, and the Chire Washing Station is a private mill here, set up to sun dry the farmer's coffee on raised beds.
Because this is a natural processed coffee, it is more fruity and sweet and should be roasted lightly, with lots of airflow. Roughly 20 seconds after the 1st cracks have stopped is our sweet spot. We are tasting key lime, even some pie crust to go along with it! A little bit of lavender, brown sugar, and it's quite nice!
