The Guji Region is one of the most remote coffee regions, but also produces some of the most legendary coffees. 

This lot was grown by the Udeyi Farmer's Co-op, and the dry processed (natural) (sun-dried) beans has brought out extra sweetness with strong notes of lemon curd, orange zest, hints of berries, floral. A silky mouthfeel, and slight chocolate and almond as it cools. As with any good Ethiopia, the fruity taste is unmistakable. A fantastic hot coffee, but just as nice when iced. 

This lot is of uncategorized heirloom varietals and it's a Grade 1 sort and very clean tasting and consistent to roast. You want to roast this like you would any other natural processed Ethiopia coffee and don't take it too far out of first cracks or give it too long of a roast.  Bump your heat up towards the end so that you don't stall out the roast. By default, the coffee is pretty silky smooth, so I give it a little bit of a faster roast and extra air flow to maximize the acidity.
