El Salvador Santa Jose Washed

While El Salvador tends to not be a particularly exciting coffee origin, this one is far higher quality than the common export. San Jose is nestled between two different mountain ranges and grows only Bourbon and Pacas varietals on their 90 hectare plot and this lot is 100% Bourbon. The folks at San Jose are known for their meticulous fermentation and drying practices which really shows in the quality of this lot. The farm as a whole also conserves a natural rain forest, which is hundreds of years old and serves as a habitat for many diverse animal species.

In the very lightest roast just 30 seconds out of first cracks, you find a bright tangy red apple with a sugar cane like sweetness and punchy finish that reminds me of orange juice.

This is a bit of a pricey offering for a washed El Salvador but we are really enjoying it for its quality and complexity.
