Colombia Pink Bourbon Honey

This is a single varietal of coffee known as Pink Bourbon. It's a legendary kind of coffee because of how interesting it tastes but is almost never grown. And for so many reasons! First, it's hard to know when it is ripe. Most coffee gets picked when it turns Red, but this one never turns red, it is pink when it is ripe. Second, it's very low producing. So you don't get as many pounds from your land than you would have if you had grown other varietals. Third, it's not disease resistant, so you have to spend a lot of time protecting it from fungus. Even if healthy, the trees don't live too long.

We have had washed process and natural process pink bourbon recently, but this is a very limited honey process! We are roasting it light and it has excellent complexity and acidity to show off. I LOVE it as espresso -- it tastes like dessert. But it's also one of the best brewed coffees we've had in a few weeks.
