I didn't know what to expect from this one. We've had washed Sumatra and washed Java coffees, but neither is common, and I'd never had a washed Bali. It turns out that it's not all that different from its wet-hulled Blue Moon cousin. Roasts that are lighter than 2nd cracks have a strong tobacco flavor that I don't think most people would find appealing, and roasts into the 2nd cracks start tasting like a Bali Blue Moon that has thinner body just isn't too exciting. However, if you roast this 20-30 seconds into the rolling 2nd cracks as if it's a wet-hulled Bali it turns super chocolatey and the roastiness of it pairs well with the inherent flavors. We are roasting it even darker than that, a full on Italian roast profile, and it's deliciously dark with chocolate undertones and good both straight or with cream.
It's fun to see these experimental microlots coming out of Bali, and I'm sure they'll only continue to get better the more experience they have with new processing techniques.
