On the Yunnan peninsula outside a very remote village is a protected forest with tea plants ranging from 500 to 800 years old. These tea leaves come exclusively from these ancient trees, and are high grade, tippy leaves, and obviously purely organic. It carries both organic and fair trade certification, as a fair trade system was set up for the caregivers of the forest.
I enjoy it as an "everyday black tea" but particularly enjoy the mystique and intrigue of the story behind the tea. It is lighter and sweeter than an Assam, but darker and smoother than a Darjeeling. It has a deep, inviting aroma, slight creaminess, and natural sweetness.
Tasting Notes: Smooth, Caramel, Malty, Complex
Steep: 2 tsp of tea for 12oz water. Water temperature: 205. Steep time 4 minutes. Sweetener: Optional
For Iced Tea: 1Tbsp of tea in 12oz of water, Water Temperature 205. Steep time 4 minutes. Sweetener: 1TBSP sugar
Approximately 18 tsp in a 1 ounce package.
