This coffee is grown on the El Matazano farm within the La Paz Region of Honduras. The farm is named after a type of fruit by the same name that is grown in the region.
For this batch, they left the "honey" mucilage around the bean and dried it under the sun. This means that the coffee is different and more special than a typical Honduras coffee. It has more sweetness, hints of fruit and flowers, and a soft mouthfeel. We're getting cherry blossom, lime, and a brown sugar sweetness. The aftertaste is sweet and without earthiness or defects.
This is a versatile coffee, enjoyable by any brew method including espresso, but as coffee it's approachable and sweet and easy to mindless sip on. As espresso it's full of crema and a bit tart, really waking you up.
