Colombia is making great strides in traceability, quality, and responsible farming. This washed process microlot came from the Huila region via the Palestina Association co-op. Tabi is a varietal developed in 2002 to be resistant to the "rust" fungus disease, while maintaining a superior taste.
Tabi coffee inherently has some hints of fruit notes -- think strawberry jam, raspberry, cantaloupe. It has more character than most Colombian coffees but is still recognizable as one. We enjoy it both as coffee and as espresso. If you want to highlight the fruit taste, then keep it about 5 degrees shy of the 2nd cracks (roughly how we would roast a washed Costa Rica). Here we are getting a thinner body but raspberry and cantaloupe notes with slight astringency but overall a REALLY nice coffee. If you roast it like a regular Colombia washed process coffee just to verge of 2nd cracks, it mostly tastes like an above average Colombia - traditional flavor with brown sugar and chocolate sweetness, and a hint of strawberry jam at the finish. For espresso we like it at this roast level or even a tick darker, and it pulls out a balanced shot of caramel and fruit.
Although the introduction of Tabi coffee in Colombia was seen as a success and is sought after, not very many farmers have switched their farms over to growing it. This is only our second time carrying Tabi, and hopefully we will see more of it in future seasons.
