Bourbon Sidra (or just Sidra to many coffee lovers) is a varietal that initially grew exclusively in Ecuador before makings its way across that border into Colombia. This offering is very special one coming to us from the southern part of the Huila Region and one of the most interesting and complex washed coffees from Colombia we have had the good fortune to roast and share with our customers.
We are roasting it much lighter than a standard Colombia (much to our surprise it shines at only one degree darker than our naturally processed Ethiopias) and as a result, it has excellent complexity and acidity to show off along with bright, fruity notes that are truly impressive. It has a lot going on --fruit, floral undertones are notable with a bright beginning and clean finish
The complexity, clean notes, and fruity flavor are really exciting to find in a Colombia bean, and while it's not from a single farm (12 farms in Terra Coffee group came together for this one) it is not to be missed if you love interesting coffees with a ton of character and a great story.
