we have four microlots and also the main crop from the la pastora estate. all five coffees are of the bourbon varietal and all five coffees are roasted lightly — the only difference is how the estate processed them after picking. last year we carried the yellow honey process and the washed process, and both were very popular with our customers. so this year in addition to those two, we also have a washed process in the kenya tradition, a red honey process, and a complete natural process. all of them taste related to each other, but different.
this is such a rare opportunity to be able to taste the differences that processing makes on a coffee! in order to allow as many people as possible to experience this, we are selling the 5 coffees as a set, in 4oz bags. we hope you find it as fascinating and fun as we do!
