The “honey processed” method instead of traditional “washed processed” means that the coffee fruit (called "honey") was allowed to remain on the bean for longer than normal, which causes the sugars and fruitiness to soak into the bean.
This is the Red Honey microlot from La Pastora Estate which was our favorite microlot from Costa Rica last year. It has a fruity hibiscus flavor, zippy, both sweetness and tartness with every sip.
As it cools, flashes of plum, citrus, and cherry appear as you drink it.
