The “honey processed” method instead of traditional “washed processed” means that the coffee fruit (called "honey") was allowed to remain on the bean for longer than normal, which causes the sugars and fruitiness to soak into the bean.
This is the Black Honey microlot from the Cumbres del Poas farm which is home to the worlds first honey processed coffees. Black honeys are the longest processing of the honeys, resulting in the most amount of fruity flavors, and basically just making them a sweeter, fruitier coffee. This coffee has no bitterness, a lot of sweetness, and strong fruit flavors of honey, cherry, and citrus.
It is very easy to drink large mugs of this coffee! It goes down smooth and makes us happy.
