Decaf Guatemala (Water Process)

For those of you who are concerned about the use of chemicals in the decaf process, Water Process Guatemala is worth your consideration. Chocolate undertones are the real selling point on this one. It is certified fair trade, and comes from the Huehuetenango growing region.
I roast it on the dark side of medium, just barely into the second cracks. If you go darker than that, you start picking up more bitterness, although with a spash of cream that bitter-baker's chocolate taste can work well. It lends itself very well to blending. We've been mixing Honduras and Guatemala together and finding that to be a tasty mug of decaf.
