Darjeeling is a growing region in India. The tea grown here is considered the "Champagne" of teas because of the complexity of taste. This Second Flush (2nd Harvest) is the most complex, and this particular Darjeeling hails from the Seeyok Estate which is a biodynamic (sustainable) farm with organic and fair trade certification.
This lot is so fantastic that it won a tea-award in India. It feels smooth -- so mellow in your mouth -- and has a natural sweetness rarely found in a black tea. The taste is delicate, floral, and subtle, as opposed to the strong and bitter character often found in lower grade black teas. When brewed correctly, it has little astringency and no bitterness. Note that a Darjeeling should be steeped at a lower-than-normal 195 degrees.
Tasting Notes: Orange Floral beginning, Brown Sugar aftertaste, Mild Malty tones, Sweet, Smooth
Steep: 1 tsp of tea for 8oz water. Water temperature: 195. Steep time 3 minutes. Sweetener: Optional
